Carluccio's
UK National Italian Restaurant Chain

The Challenge:
To produce and deliver a National Labour Efficiency Strategy designed to reduce labour costs without revenue compromise.

The Solution: 
In collaboration with the Executive Team a National Labour Efficiency Strategy was created and implemented. The strategy centered around achieving an efficient labour productivity performance across the entire restaurant chain utilising labour productivity modelling overlaid with sales and labour benchmark comparison matrices. 
A substantial annualised labour cost reduction was identified through the use of a benchmark matrix analysis technique and is forecast to be delivered during 2020.

Mill Farm Sports Village
AFC Fylde

The Challenge:
To produce and deliver a “Sport, Leisure and Hospitality Strategy” designed to improve the AFC Fylde stadium match day and non-match day customer hospitality experience.

The Solution: 
In collaboration with the Club owner, AFC Fylde CEO and the Mill Farm Sports Village Executive Team a Sports, Leisure and Hospitality Strategy was created and implemented in tandem with a Mill Farm Sports Village organisational restructure. 
The strategy focused upon creating operating plans for all aspects of the stadium operation including match day stadium operating plans, Italian restaurant, hospitality and banqueting suites, sports bars, kiosk operations, all weather sports centre and 18-bed boutique hotel. The assignment took 6 months to complete and I assumed the role of MD during this time after which I handed the strategy implementation programme over to the newly restructured Executive Team. 
The sales and profit performance of the Village has improved significantly and the organisational restructure is forecast to deliver a high six-figure annualised cost saving.

Carluccio's (second project)
UK National Italian Restaurant Chain

The Challenge:
To produce and deliver an “Intensive Care Strategy” focused upon materially improving the financial performance of the bottom-performing restaurants across the UK.

The Solution: 
In collaboration with the Commercial and Operations Directors a "Hot House Strategy" was created and implemented. The strategy centered around creating a thorough deep-dive operational review and support process for multi-site senior leaders to adopt and follow. The strategy contained a number of elements critical to the successful performance turnaround of each of the 15 restaurants including, team skill v will capability assessments, deep-dive standards and service audit, restaurant specific SMART Action Plan creation and increased senior leadership visit frequency and support. 
Within 4 months of the launch of the Hot House Strategy the group of 15 restaurants returned a materially positive Year on Year Sales swing moving the group from underperforming to outperforming the core estate.

Pendle Leisure Trust
Pendle Borough Council

The Challenge:
To produce a Food and Beverage Revitalisation Strategy designed to cost-effectively improve Food and Beverage sales and profitability performances.

The Solution: 
In collaboration with the Leisure Trust CEO and Finance Director a Food and Beverage Strategy was produced and presented. The strategy centered around modernising the Trust’s food and beverage proposition, service and promotional strategies to ensure that all elements of food and beverage provided by the Trust resonated with their respective target markets. 
New margin–rich food and beverage menus were devised, along with complimentary promotional and marketing strategies which were implemented using a targeted CRM approach. Labour schedules were re-modelled in order to drive efficiency and improve service quality. 
Subsequent results have been outstanding with significant food and beverage income growth across the group in tandem with improved customer engagement and satisfaction scores.
